Tofu and Bok Choy: A Simple Meal

Tofu and Bok Choy

I eat around 200 grams of protein a day. It’s not a moral stance—just a practical one. I lift early, I work a lot, and hitting that number makes everything a little easier.

That means a lot of meat. Chicken, ground beef, salmon when it’s on sale. But also tofu, which I actually like. Tofu and bok choy is probably the one thing I make regularly that doesn’t feel like I’m just assembling nutrients. It’s simple and it tastes good. That’s enough.

There’s no real recipe. Cube the tofu. Salt it. Brown it in oil. Toss in some garlic. Add bok choy. Soy sauce, maybe rice vinegar if I feel like pretending I measured anything. Steam it for a minute, stir it around, eat. Sometimes I add chili oil. Sometimes I don’t.

The kids love it too. I’ll cook some rice for them, maybe fry an egg on the side. They clean their plates and ask if there’s more.
